Matcha Pistachio Energy Balls

Matcha Pistachio Energy Balls (vegan, paleo)

Ingredients (makes 18 energy balls)

12 dates (Medjol, or soaked in hot water)

1/4 cup pistachios

1 cup almonds

1 tbsp coconut oil

1 tbsp matcha powder


1. Pulse all ingredients in a food processor until you have a sticky paste.

2. Make small balls. Roll in matcha powder or/and shredded coconut or pistachios.

3. Store in the fridge. (one week) or freezer (one month).
