Elderflower Fritters

Elderflower is such a variable plant. No wonder Hippocrates described it as his “medicine chest” because of the wide array of health concerns it seemed to cure. The white flowers are not only beautiful and fragrant but you can also use them in the kitchen. Infusions, cordials, syrups, or these elderflower fritters. The berries can also be eaten when fully ripe (cooked to make jam or jelly). Both the flower and the berry have traditionally been used to treat diabetes.
Elderflower Fritters
Ingredients:
handful of elderflowers
3 eggs
3 tbsp coconut flour
3 tbsp tapioca starch
pinch of salt
Directions:
1. Make a light batter from eggs, flour, starch and salt. You can add herbs as well.
2. Preheat your skillet. Dip the flowers into the batter and fry on olive oil for a couple of minutes from both sides.
3. Serve with greens or a salad.
