The sun finally sends some summer greetings to Provence and here comes the picnic season. Zucchini fritters are one of those portable picnic food which will fill you up and are loved also by small kids. Grab some salad and you are ready for a lunch in the outdoors. Zucchini fritters (gluten free, lactose free)
1 big zucchini, grated
3 tbsp coconut flour
3 tbsp arrowroot starch
spices and herbs (optional)
1. Grate or spiralize the zucchini. Salt it and let stand for half an hour. This trick makes the zucchini less watery and you won't end up with soggy fritters.
2. Mix eggs, flours and spices or herbs if you like.
3. Preheat your pancake pan and fry a spoonful of the dough from both sides for a couple of minutes.
