Green Banana Flour Pancakes (grain-free, dairy-free)



As a part of my 21 days Gluten-Free Program with FoodMatters, I decided to test some new flours on the market of gluten-free flours. As there are more and more people with diagnosed gluten intolerance or people who just want to choose a healthier lifestyle, the offer of gluten-free products skyrocketed. Although I am a proponent of using whole, unprocessed foods, sometimes a gluten-free flour comes handy especially if it's a flour packed with so many nutrients such as green banana flour. Chosen as one of the 19 healthy new ingredients to cook with in 2018, green banana flour is a source of resistant starch, also known as insoluble dietary fiber. These pancakes will be your new friend as they are grain-free and dairy-free. When you omit the maple syrup, you have a wonderful added sugar-free breakfast option.

Green Banana Flour Pancakes

Ingredients:

1/2 cup + 3 tbsp green banana flour (the batter should be thick, so feel free to adjust the amount)

2 eggs

1/2 cup applesauce

2 tbsp ghee

1 tsp gluten-free baking powder

1tsp cinnamon

1 cup non dairy milk

Directions:

1. Prepare the batter by mixing well all ingredients.

2. Preheat the pancake skillet and bake from both sides for a couple of minutes.
