Posset - An Ancient Remedy For Modern Times

Posset (also historically spelled poshote, poshotte) is an ancient Celtic drink made of milk curdled with wine or ale, often spiced, which was often used as a remedy for a cold or to help falling asleep.
Rosemary has long been used as a memory aid. It has a tonic effect on the nervous system and is good for circulation. It strengthens the heart and reduces high blood pressure.
This recipe is dairy and gluten free but if you prefer, use milk (always use the unpasteurized, raw whole fat organic version - a lot to remember, right?) and normal beer (organic as well, in case you wondered).
Posset Recipe
Ingredients
1 cup non dairy milk
1 cup gluten free beer
1 tbsp chestnut flour
a pinch of salt and some rosemary leaves
1 tbsp honey
1 tsp cinnamon, pinch of nutmeg
Directions
1. Heat the milk with rosemary, chestnut flour, salt and spices until boiling.
2. Set aside and add beer and honey. Discard rosemary leaves and enjoy!
