Healthy Pain aux Raisins (Raisin Bread)

An all time favorite in French bakeries, this healthier sourdough version of raisin bread won't raise your blood sugar as it is made with a healthy alternative to regular sugar - coconut sugar. Healthy Pain aux Raisins (Raisin Bread)
Ingredients
Dough
60 grams einkorn sourdough
300 grams einkorn flour
1 egg
50 grams coconut sugar
1 cup water
1 tbsp ghee or butter
1 tbsp cinnamon
half tsp salt
Filling
50 grams coconut sugar
salt
1 tsp cinnamon
3 tbsp ghee or butter
2 tbsp dried raisins
Instructions
1. In a bowl, combine sourdough with water, egg, sugar and cinnamon. Add the flour, salt and mix. Add the ghee or butter and knead the dough by hand. Let rest in the bowl for half an hour, covered by a plate and then turn the dough once.
2. Transfer to the bowl, cover with a plastic wrap and let proof at room temperature for 10 hours or overnight.
3. Dust a work surface and roll the dough to a rectangle.
4. Make the filling: mix coconut sugar, cinnamon and salt. Add the butter and spread the mixture over the dough. Sprinkle the raisins on top. Roll the dough to form a cylinder.
5. Line a baking sheet with parchment paper. Cut the cylinder into thumb thick rounds and place cut side down on the baking sheet. Cover with a wrap and let proof for 1 hour or more.
6. Preheat the oven to 375 F/ 190 C. Bake the rolls for 25 minutes. Let cool and enjoy!
