Silken Tofu Coffee Pudding

As the newest research suggests that there are numerous benefits in drinking coffee, it seemed as a good idea to put some freshly brewed espresso into a healthy dessert. Although I don't often consume unfermented tofu, silken tofu creates that lovely creamy texture in this recipe.

Silken Tofu Coffee Pudding

Ingredients (makes 4 servings)

400 grams silken tofu

2 tbsp. xylitol

1 cup espresso

2 tbsp. chia seeds


1. Mix silken tofu with xylitol or other sweetener of your choice.

2. Pour espresso in the mixture.

3. Blend with chia seeds in a blender.

4. Let sit in the fridge overnight or at least one hour (the chia seeds will thicken and gel the pudding).
