Kale Pesto

If you miss pesto during the cold months when there's only cabbage on the shelves, don't despair, there is kale! Kale is my everyday 'chouchou' ( a nickname given to a person who is special to you) as French use to say. I make kale chips, stir fry it or make this very simple pesto recipe. Enjoy with brown rice pasta or on a sourdough pizza crust. A delish!

Kale Pesto


4 kale leaves without stems, torn to pieces

1 tsp. salt

1/2 cup olive oil

1 clove garlic (if you don't tolerate raw garlic, use pickled garlic)

juice of one lemon

1/2 cup almond meal


Pulse all the ingredients to the desired consistency. Easy as that.
