Blini (gluten and lactose free)



Looking for the perfect recipe for the New Year's Eve? Ever heard of blini? Blini is a Russian pancake traditionally made from buckwheat or wheat flour. Blinis were considered by early Slavic people in pre-Christian times to be a symbol of the sun, due to their round form. They were traditionally prepared at the end of winter to honor the rebirth of the new sun.

Blini (gluten and lactose free)

Ingredients

1 cup buckwheat flour 2/3 cup whole rice flour 1/2 teaspoon baking powder 3/4 teaspoon salt 3/4 cup kefir 1 large or two small eggs 2 tbsp. ghee plus more to grease the pan

Directions

1. In a blender, mix egg and kefir.

2. Start adding flours . The batter should be similar to pancake batter. From my experience, every kind of flour behaves differently, even the process of milling matters. Therefore, stop adding flour when you reach the desired consistency.

3. Preheat the skillet for ten minutes. Set on high.

4. Pour small amount of batter onto the skillet, fry the blini for 2 or 3 minutes on each side.

Serve with smoked salmon and greens.
