Poppy Seeds Apple Pie (gluten and lactose free)



Have you read this blog about the benefits of poppy seeds? With Christmas approaching, poppy seeds are widely used in many traditional Slovak desserts. This pie is a simple version of our traditional so called 'Bountiful Cake' ('Stedrak' in Slovak, translates as generous). Nature provides all ingredients and this pie is a celebration of whole real foods.

Poppy seeds Apple Pie

Ingredients

1 cup almond or walnut meal

1 cup gluten-free oats

2 cups poppy seeds, grind them at home for the best flavour

2 tbsp. coconut or another whole unprocessed sugar 7 apples

3 tbsp. ghee or butter if not lactose intolerant Directions

1.Combine almond or walnut meal, poppy seed meal and oats.

2. Add sugar. Peel apples and shred them.

3. Oil a baking form. Start with a layer of nuts-poppy seeds-oats mixture, alternate with shredded apples. You should end up with a layer of nuts-poppy seeds-oats mixture.

4. Heat ghee and drizzle over the pie.

5. Bake at 180°C for 45 minutes.
