Raw Granola Bars

If you were one of those teenagers (me included) who gobbled up store bought granola bars convinced that they were healthy, bear with me. In conventional and even organic granola bars, almost none of the ingredients are healthy. Sugar (often second on the ingredients list! ), canola oil, brown sugar syrup, corn flour, high maltose corn syrup, caramel colour? Seriously, how healthy is that? Nothing is easier to make than homemade granola bars. This raw version is, as you might have guessed, raw, so you don't even have to preheat the oven.

Raw Granola Bars


2 cups buckwheat flakes (or oats if you are not sensitive to avenin found in oats)

3/4 cup nut butter (almond, cashew)

1/2 cup raw honey

1/2 tsp. salt

1/4 cup raw chocolate nibs (or chocolate chips with at least 70 % chocolate)

1/4 cup desiccated coconut

2 Tbsp. coconut oil


1.Heat the nut butter, honey and coconut oil, stirring until combined. Remove from heat and add the remaining ingredients.

2. Pour the warm nut butter mixture in a glass dish, greased with coconut oil and flatten the mixture using your hands.

3. Cover and refrigerate until firm (about an hour) or freeze for half an hour. Slice into squares.
