St. Patrick's Day Cookies (gluten-free, refined sugar free, dairy free)



These delicious cookies are just the right treat for St. Patrick' s Day! What's the secret ingredient? Find out in the recipe below! I promise you, no food coloring involved! Plus they are gluten-free, refined sugar free and dairy free.

Saint Patrick's Day Cookies

Ingredients:

2 1/2 cups oat flour (ground oats) 1 tsp baking soda 1/4 tsp sea salt 1/2 cup coconut sugar 1/2 cup coconut oil, melted 1/2 cup unsweetened applesauce 1 organic egg 2 tsp matcha green tea powder

2 big leaves of spinach or half cup, stems removed 1/3 cup chocolate chips

Directions:

1. Mix all ingredients.

2. Cover bowl with a plate and place in the fridge for 1 hour. 3. Preheat oven to 190 degrees C / 375 degrees F. 4. Scoop out balls and flatten onto a parchment paper lined baking sheet.

5. Bake for 12/14 minutes. 6. Remove from oven and let cool.
